Kind of a Chicken Parmesan...



One of the great quotes you will ever use: "Learn to use what you have got, and you'll not miss what you have not".... Ben Franklin? Nope. Will Rogers? Wrong again... Underdog, the superhuman cartoon canine with the immortal voice of Wally Cox? Bingo! I've learned good cooks can innovate, when all the perfect ingredients are not available. I had chicken tenders, an extra box of dried spaghetti, some frozen designer pizza sauce I make, a jar of Neumans Spaghetti sauce, alot of spices, mushrooms, and some leftover Parmesan cheese. This is what happened (see photo). With Italian bread (sprinkled heavily with that shredded Parmesan)!, and carrot cake- we had a feast! Imagination is what sets us apart from the other beasts on this planet- please use yours everyday!

you forgot to have an 'extra' side of carbs with your carbs(just funnin' on ya)....this looks really tasty...

Ake- If I ever am moved to write a cookbook, the title will be "100 Recipes Using Left-overs"!
DogB- Nah, we bought the cake, and it's darn near gone already! Tasty stuff!
jeff- True, but abstract thought is how we advance!

I love doing that stuff. It is also a great way to get the kids to eat (and like) stuff that hey say that they hate. You can hide anything in those creations.

That is right! Cooking is a 'flexible' process! & you can always innovate and improvise upon it to an infinite degree!

Those dishes look so delicious ( the presentation is excellent as always) & I am utterly sure they must have tasted wonderful too! :)

Jen- Yeah, even when I'm a low on supplies- I still have alot of cooking stuff in the cupboards and freezer!
Tenter- Cooking for kids can always narrow your choices..
G-man- I'd rather cook than bake too!
rog- Haven't seen that show- I'll have to look for it!
mona- I'm pretty sure we all do this, and sometimes turns out even better than the recipe.. I'm in a couple of cookbooks, but maybe someday.....

Oooh! ooh me sir, I love to experiment, in-fact my imagination has been known to go a bit wild. Never heard of the 'Underdog the superhuman canine' but he's so right. Sometimes we enjoy our chuck-ups better than some well thought out recipes.

That looks great! I have to say, one time I was out of sausage and hamburger, so I cut up some chicken breasts, baked those, and mixed them with the spaghetti sauce and it turned out really good!

My husband and I agree that some of the best meals I've ever made were what we call "door knock dinners".

Remember that Food Network show where the guy shows up at your door unannounced with a chef to make a gourmet meal out of whatever you have in the fridge and pantry?

That's me, many nights.

It pushes your creativity.

Queenie- As we say here- "Wing it and see where it flies".. This country was built on cross pollination and sometimes had nothing, except our imagination! Turned out alot of strange people like me! Underdog was a cartoon character who screwed up alot, but always found the pony in the horse sh*t!
bina- Give it a fancy name, and don't blink... They think you're a genius!
Tanya- Wally Cox was amazing, in his Chester Milquetoast delivery! Carrot cake trips your trigger... good to know!
har- Me too, kid- Wally Cox was the best at what he did..
melody- You agree part of the fun is the challenge! If you ever plan to amaze people, don't give them the norm!

Tav/lini- My wife and I once went on a low carb diet and lost a ton of weight! I could have sustained, but she needed potatoes bad! We are both up to our fighting(sumo class!) weight again...
Beth- I think Wally Cox did the voice of Mr. Peabody( The Wayback Machine?) also! Funny stuff way ahead of its' time..

I could never go low carb--I mean, my basic food groups consist of Pizza, Beer and Beer. It would be too difficult to adjust!
