A Light, Even Maybe Healthy Supper....



Last night, I made some cheesy broccoli soup to go with the salmon I was going to cook that night. The salmon was done in an oriental flavored marinade, then broiled til done. We ended up having quite a bit of the soup, which left us kind of full and with a fair amount of salmon left. I wanted to use it soon, so tonight I made an oriental flavored salmon salad to put into a half of a fresh muskmelon. The salad contained fresh green cabbage, chopped carrots, chopped celery, salmon cut into bite size pieces, chopped red onion, green onion, and pineapple chunks. The dressing was cole slaw dressing, fish sauce, soy sauce, chopped ginger, a little honey, white pepper, and chopped garlic. Quite light, and refreshing to boot! Cooking for two sometimes means not so many courses, but something done well....

looks tasty but how does all that cole slaw fixins go with salmon and melon...something new to try.

Steph- I'm really trying to eat a little healthier! Someday I'll write a diet book and I already have the title; "If It Tastes Good, Spit It Out!"
Snow- I can tell if a melon is ripe, but have never figured out how to find out if it tastes good without cutting into it!
Finn- Absolutely! When do we leave for Capri?
Pink- I should have taken a picture of the soup for comparison!
DogB- We made up this oriental slaw to bring to a wake, and it was the first salad gone! We have eaten chicken salad, and tuna salad out of a melon half before, and thought salmon in that slaw recipe would be pretty good- and it really was!

wow...I'm so not a fish person, but the rest of it sounds great! Maybe I just haven't had fish cooked the "right" way or by the "Right" person, huh? ;)

DogB- Well, It was a wake! I could have lied and told you it was for a coronation....
har- It really was good! It's been unseasonably warm here, so it was light and right!
Beth- The salmon was marinated in many of the same flavors, and there really wasn't alot of it in a serving...
Paul- I will watch "Little Shop Of Horrors"(Stage, Movie musical, or original) anytime!
