More Food! What Else?
Friday night brought an impromptu supper.. the usual homemade pizza, but instead of a small one- a big one, as my son and his girlfriend came over to join us! Half of it was three cheese, sausage, pepperoni, mushroom, green pepper, and onion- while the other half was same sans green pepper and onion..
Saturday, wife had to work all day, but requested a Chef's salad for eats- no problemo!
Toppings were celery, carrots, bacon, ham, chopped hard cooked egg, shredded cheese and tomato... I like my Blue cheese dressing, she prefers sweet Italian..
Sunday brought a nice roast chicken, stuffed with an Italian flavored rice that was simmered in red sauce, and blended with ground Italian sausage. Good stuff! Ton of it left, as I melted some cheese over what didn't fit into bird and baked as a casserole! That last photo is my son's "to go" plate! We have brought him lunch where he works on Sunday for 10 years! Only a mile from our house..
Enough left overs to get us through a couple of days, my work is done here.. until next time! I think I'll bake a cake or something....

Ummmm..... Blue Cheese....
I love blue cheese dressing. I buy the refrigerated kind then add more crumbled blue cheese to it.
I love how you come up with creative ways to turn leftovers into new dishes. It's great that you're set with meals for the next couple of days now. Everything sounds scrumptious!

Homemade pizza....I haven't made one in ages. Good idea!
I can't imagine enough leftovers to last for 2 days. Even Thanksgiving usually only gives me one meal worth of leftovers! My work is never done, sadly.
UrbanV- We make them fairly often- friends and family always look forward to a home made crust!
Marjie- More people to feed! I still cook like there is four of us, and there's only two inn the house now...
Sounds hearty and delicious! I wish I could get a big heap o' leftovers, too.

Kris- Roasting a chicken is always a hit here! I brine it before, which makes leftovers less "fowl" smelling!
Jules- Rice was great- it's going to be a Monday night "rerun"!
I'm with G-Man, I would be happy with that to-go plate (including some of that homemade pizza!).

Awe.... you had the son and girlfriend over.... I'm not really looking forward to the girlfriend..

I think you'd also be proud - I made homemade pizza on Sunday (using yeast and all that). It's so darn good.

John- Thanks! A kid will always be your kid... It's like trying to get gum off your shoe on a hot day....
Neat idea about the skewers used for trussing instead of twine.
Chris- I have both, but one is a lazy mans approach! I also baste bird with strips of bacon, so I don't have to baste as often!
OK, now I'm officially ravenously hungry.

Okay. I don't know what sounds better. The pizza or the chicken. How 'bout sending me some and then I can decide?
