Friday Night Fajitas, Sunday Pork Tenderloin
I'm still trying to get back in the groove, but cooking right now is like pulling teeth! I did make a version of a steak fajita that was tasty but a little on the fiery side! I didn't marinade it very long, so I put the flavor into the sauce and got more heat than I needed..
Sunday, I had a couple of pork tenderloins I seasoned and put into a counter top electric rotisserie... I bought the thing used for $11 dollars, and it is easily worth half of that! After battling the unit for an hour, I finished the tenderloins in the oven. Home made mashed potatoes and gravy was a good side today, with banana bread made with dried cranberries for a treat later...
Something I do with gravy may be information you may want to use someday. I don't know if any of you use this trick for gravy, but it usually makes it go with the meat better. Whatever seasonings I used on the meat to flavor it, I add the same spice mixture to the gravy- makes it match in an easy, sensible way!
I hope to regain a bit of my energy for cooking this week, because Saturday the card party and food is at my place! Appetizers! Home made pizza! Dessert! Then guys play cards, and women go to a movie...

No girls allowed to play cards? well, now what if someone doesnt want to go to the movies, do they go home or just sit in the corner....lol
HMMM. I would not allow a no women card game, Id insist on co-ed and doubly insist on strip poker.

Denise- We do usually play cards with the wives, but a buddy of mine has got cancer- and his friends all thought it would be a good idea for a good ole boy get together...
Donna- These are some of my oldest friends...You wouldn't want to see us naked!
KB- This will be the first men's poker party without the wives in years.. Besides, they all get to eat and drink before cards!
Mona- Set-back, Texas Hold'em, Cribbage, etc. I like them all! Good gravy that isn't pasty ,lumpy, or runny seems like magic to some people!
ooh, card night and movie night sounds like fun! I like the fajitas--been meaning to make some of those myself!
Ummm, now I am in a dilemma...fajitas or homemade noodles? No BBQ brisket...told you when I come over here and beef comes to my mind, and that bread, oh you...
August can be a funky month transitioning into fall. The teachers I know get a little crazy and down around now. I am trying to treat every day like a vacation.
You need something fun to pick up your spirits. Maybe, try a fun new dessert for us :-)

Hope your love of cooking returns soon. I use a half teaspoon of Marmite (yes Marmite) in my gravy when there's no meat juices - everyone loves it!
Tavolini- Mine were stupid tender, but stupid hot! I have a kind wife, thank God!
Chef- Hit of the day was that banana-cranberry bread...wife really got after that!
Hit40- Female teachers are great... Nerds- yet so endearing.. I will always be attracted to females that have brains, as well as good looks-even when they don't think they do!

As much as we love meat, why haven't I considered making steak fajitas at home before?? You're just filling me with great ideas. Now if I can just remember what to buy (seasoning and the little extras) while I'm out, that would help!
Btw, what seasoning do you use??
I'm kind of in love with mashed potatoes and gravy. That's all I see!
Scarlet- Taco seasoning, chili powder, ground cumin,onion powder, and crushed garlic.. It wasn't a true fajita in my book, as I simmered the steak strips in the sauce!

Snowniece- This was perfect! A rich, traditional banana bread, moist, sweet, and with the flavor burst of dried cranberries! Auntie Goob( my wife!) loved it...
B insists he's not a fan of pork tenderloin. I think I know how to prove him wrong...
LiLu- The key to pork tenderloin is flavoring it rather heavily...it is kind of tasteless( like beef tenderloin) but very tender!
Love the idea of dried cranberries in the banana bread!
Gene- So did my wife! 1/2 a loaf went missing while I was watching a movie....
Card night! Fun. I still need to implement one of those. Spicy fajitas. I like this.
