Wednesday Night Stir-Fry- Sweet And Sour Scallops???
Occasionally, I get annoyed with the standard issue of food offerings.. I, like all of us, have left-overs or surplus food, and this is probably where I do my best work!
I took 12oz. of sea scallops, a pineapple looking for a place on this Earth, leftover brown AND white rice needing a purpose.... and helped them all!
I love the flavor print of sweet and sour Asian sauce... my wife- not so much! I created my own version of this sauce using orange juice, pineapple(finely minced), soy sauce, tomato paste, rice vinegar, brown sugar,sesame oil, hot sauce, crushed garlic, and corn starch (as the thickening agent!).. This sauce was bright, tangy, and yet had a sweetness you need to make it balance... Stir-fried green pepper chunks, onion, mushrooms, and more pineapple- to soften a bit, but still leave crunchy... Added thickened sauce, and sea scallops to mix and brought to heat, until scallops were done but still tender! The rice was micro'd until hot, and dinner commenced... I will cut the crap here and now- I am my toughest critic, but found no fault with this dish! My wife simply ate and went "Mmmmm-mm" a lot! Total cost of meal(with enough left-over for my wife's lunch tomorrow!), about $8.00...- which works out to less than $2.70 for each meal! Look at the photo, and think about it the next time you go into McDonalds... There is a better way to live, we just have to remember that!

I love scallops and have never thought to use them in stir fry. They look soooo good.
With each ingredient you listed in this fantastic stir fry, my own MMMMs were getting louder.

Donna- I've really had to learn not to throw everything in the pantry when making stir-fry...

Ake- The lack of corn syrup as a sweetening agent, made even my wife(who doesn't like sweet n sour normally either!)a believer in the lighter, brighter citrusy version...

I love adding this and that and coming up with something that's mine, and works. Sadly, it's hard to stir fry for 9, 10 or 11 people, so I use my oven or broiler and improvise. Still, I agree with you that sweet and sour is a great flavor combo!
I love anything sweet and sour, and pineapples or mangoes in (or with) my food.
I wish I could do what you do and take leftovers and whip them into something gourmet!
Marjie- Stir-fry for up to 4 people is my comfort level... Your crowd would be a challenge!
Scarlet- Pineapple sounded good, and by golly- it was! Having green bell peppers and pineapple made me think of stir-fry...
I LOVE the sweet sour Asian sauce. I like veggies it chicken cooked in the sauce with fried rice!
I knew this was genius from the title alone. WHY HAVE I NOT THOUGHT OF THIS BEFORE??

Raisin- I didn't take the "photo op" those other foodies(God bless them!) did... I just took a picture of what real food real people want to eat!
You go Buff! I love the way you took those ingredients and gave them a purpose...to be on my plate!
A friends hubby called while we were walking and did not want to wait for her to come cook dinner, he wanted McDonalds, and she told him there was food in the fridge that had purpose and now I am laughing, but you are soooooo right...I hate fast food!
Chef- I eat the occasional drive thru stuff(like most of us!), but it has to be out of neccessity!
Sounds like something I can actually eat on my diet. I love that you made your own sauce. I always do my own. And great that you made a meal for an amount less than two Starbucks drinks!
I love sweet and sour food...... I aint never had scallops before though.... but dammit that grub looks wonderful....

Angela- I've probably spent more time trying to perfect various sauces, than any other aspect of my cooking! I preach the savings of cooking it yourself, and utilizing left-overs!
Marmy- I like scallops, and these were tender and flavorful...
