The "I Can't Wait For Spring" Supper...
Winter just won't let go this year! Craving something light, and to remind us that warmer days are coming- I made a batch of chicken salad, placed in a muskmelon for supper... Cooked chicken breast-cubed, a couple of hard boiled eggs-chopped, chopped celery and onions, mayo, mustard, and lemon pepper- all mixed thoroughly and chilled. Melon cleaned, cut in half- ready for salad...Simple but refreshing!
I also jumped on the banana wagon we all seem to be on, and made a straight banana bread-moist and rich.. I nice addition to the light meal. There is only two of us- kids are grown and gone...I look forward to an opportunity to cook a big meal- Easter is coming!

I love melon but I'm on the GI diet and melon isn't good. Chicken however is very good! :)
Chicken salad in melon - sounds wonderful.

K- This is a refreshing change- can be done with tuna, chicken, even ham and cheese..
Very nice and spring-y! You're right about the bananas -- I made "chunky monkey" cookies over the weekend -- start out with banana nut muffin mix and add fresh banana and chocolate chunks. Dee-lish!

Everyone is making banana bread. It was Christo who started the revolution! I made a loaf on Sunday. It was finished before it had cooled!

This is just the kind of meal I wished I had right now...Spring is playing hide and go seek with us all over...fooling the buds too!
I woke up not feeling good on my first day of culinary class :(, how about some chicken soup for this girl...on the menu soon?

I would have never thought of melon and chicken salad refreshing indeed.
I have no grandchildren- my kids have told me I won't- until I grow up...I could teach that kid so much!
