Sunday dinner- Simple Stuff!



As it is winter, snow everywhere- we wanted something roasted, so the kitchen would be toasty for hours! Stuffed roast capon- a favorite! About a 6 pounder, stuffed with a brown rice,celery,bacon,onion concoction worked like mad. Sliced mushrooms rendered in the juice always works. Blueberry muffins were on the side.. Wife delivering that one plate to my son at work, we eat soon!

Yumm! We're on loin of pork with herb garlic crust, cranberry sherry sauce, mashed potatoes and white corn. Probably not as portable as yours.

& We had Chinese food for dinner along with some saffron biryani and also some sponge balls in condensed saffron milk with pistachios for dessert :)

Mmmm ... I did this last Sunday only with a chicken (sausage and apple stuffing) and homemade bread on the side. OK, maybe it really wasn't like yours!

Gosh, that looks wonderful and warming and happy-making. Here I just made a coffee cake and fresh brewed coffee - good but not nearly as satisfying as what you have.

casdok- Truth be told, I enjoy others enjoying my cooking, far more than I enjoy it. Did hit the spot, though!
rog- I can go as gourmet as you want, but simple things done well are the core of my life! That's my way of saying "I have had Hamburger Helper, and ate the heck out of it!".
annie- I pooched a pizza crust on Sat.- people who can bake will always be admired by me!
anndi- If you're ever in the neighborhood, you got a standing invite!

Although i have started to dabble in learning to cook on the weekends! I'm trying a new recipe each weekend. :)

Buff have you any ideas how to cook crayfish (frozen). For some unknown reason I brought a tray of them from IKEA, don't ask me why (a moment of madness). I have Akela coming to stay in a couple of weeks for the weekend, and thought I'd do something with them for her, but nothing has inspired me on the net. Hope you don't think I;m cheeky asking, but as my grandpa used to say you gain nothing if you don't ask!

Queenie- Steam or boil- I prefer steam, as they retain more flavor! A good strong spicing of the water never hurts, and they show well in Creole or Cajun recipes. Look up Gumbo or Jambalaya- both use rice! Mud bugs have more natural flavor than lobster or crab! Only one good segment of meat in them, but use the shells and what's left in a broth..
snowniece- 20 minutes a pound at 350 F- you cannot miss!
T.M.- If I could make a woman happy that easy...
har- Roasting anything is the simplest way of making a good meal!

How far away do you live again????

I made a batch of bean and vegetable soup last night for the freezer - it's delicious with a glug of olive oil just before serving. The day after is a bit windy though! :(

Sunday Roast is me most favourite dinner :) - I cook a roast every Sunday, except this last one we was out all day so I did it yesterday.... they had (Im allergic to pork lol) Roasted stuffed pork joint, crispy spuds, 3 steamed veggies, yorkshire puds and lashings of gravy, with chocolate steamed sponge pudding with heaps of custard.... me, well, I had a carrot LMFAO ;)...

Oh how I would LOVE someone to cook for me one of these days.....
