Something I've Talked About, And Finally Did- Mexican Pizza..
I had that left over chunk of Southwestern flavored pot roast, and was planning on soft shell shredded beef tacos, but when I checked the fridge- we didn't have any soft shells.. Hard shell didn't seem a good fit, so I finally made my version of a Mexican pizza.
I made my normal from "scratch" pizza crust (which is lighter than most I've had!)with my 6 quart Kitchen-Aid mixer, using the dough hook.. While the dough rose, I chopped up the beef, some onion, shredded cheese, made a sauce from taco sauce, tomato juice, and spices, and chopped some fresh lettuce. Sliced black olives went on it also...
After dough had risen once, I spread it out on a cookie sheet, and let it rise a bit more... The sauce had simmered/thickened to a good consistency, and was spread on dough.. Next a layer of cheese, then onions, then olives... Baked at 450F for 15 minutes and served. The pizza was then topped per piece by the uncooked lettuce, extra shredded cheese and taco sauce(if wanted). Pretty darn tasty, if I do say so myself!
We got the Tex-Mex flavor we had been craving, in a pretty neat and easy meal..

yum! Now I have the grummbellies!
Years ago when my kids were small, I made my version of Mexican Pizza. It was very good, and very High... about a good 5 or 6 inches, very colorful, and my children would only call it a Mexican Birthday Cake....
Go figure!
Okay buff, now I have to go make lunch, but all I have a taste for is .... you guess'd it....

I'll be needing the recipe for that pizza dough. I haven't found the perfect one yet.
I love homemade pizza dough. I actually make it myself on the weekends from time to time.
cool idea....I wonder if experimenting with the crust and getting more cornmeal in it would take this taco pizza all the way to taco land....
StarB- A lot of versions on the Internet- none of which I liked..
Bina- The crust had a light neutral flavor and texture- which made toppings come through well!
Ake- I had to call it something- really not pizza flavored at all!
Finn- Here you go:
1. 3/4 cup of warm water in bowl
2. 1 pack of fast rising yeast
3. 2 Tbs of white sugar
4. Mix above to "proof" yeast- 5-7 minutes..
5. Add 2 cups of flour to mix
6. 4 Tbs of olive oil
7. Mix all aboove until you have a pliable dough.
8. Lightly coat bowl w/olive oil, cover, let rise in warm place for 1 hr.
9. Punch down, spread on lightly oiled sheet pan, let rise in warm place for 10 minutes.
10. Do your stuff!
K- It seems the more I do my own, the faster I can do this..

Finn- I forgot the teaspoon of salt!

Bina- I left out the part where I put it on a stick and scared the sh*t out of my wife with it...

Heff- I just made mayo from scratch for the first time- it ain't Hellmans!
JGene- I actually have a ground Jalapeno salsa that was in the sauce!
Hit 40- It would take me forever to get those numbers replaced- phones are cheap!

I love, love, love mexican pizza. Sans olives of course. Mexican Lasagna comes in a close second.
Everything is better on pizza!! I think I have thrown every leftover possible on a pizza crust ;) Good topping choices!

Love this idea.. and thanks for providing the crust recipe.. doesnt sound too difficult, this would be a meal my kids would enjoy..

I used to make an appetizer with masa harina, and called them masa boats, so I am wondering if that would work, but anything with those ingredients sound like you had a great meal! hmmmmm, tacos have not been in this house in a few months....
Chef- I don't see why not... I tend to prefer flour when it is to be tender or soft, and corn flour when sturdy and crisp..
