Dinner For One...Sort Of A Huevo Ranchero Minus Tortilla!
My wife and I ended up on different schedules yesterday, so when I got home, she was on her way to class. I had some leftover taco meat, a hunk of colby cheese left just big enough for one serving, and a dab of jalepeno salsa- both red and green... I fried one egg, over easy, put the meat and cheese on it until cheese melted, put it on a plate, and poured on the salsa! This is what a guy would eat when no one was looking...
The weather frauds predicted snow flurries for Tues., but no way is that going to happen- way too warm for that, thank God...

That was a perfect combo!
Tortilla is made just the way we make our rotis ( check out on The Youtube & you will find no difference). Except, we make them three times a day, fresh, from the scratch, for each meal!

& we are sweltering in a 110 already ( 43 degrees celcius )
DogB- Good point! I wasn't that hungry last night, or it would have been two- in the tortilla!
Mona- 110F???? Geez, that's too hot for anybody! You make snow look good...
That sort of cooking could get you a fine job at my favorite Mexican joint. Plus it has to be a bit warmer here in the Twin Cities. We're expecting a whopping 50 degrees today!

Yum-O! I think I know what we'll have for dinner tonight. The kids love stuff that they can "build" on their own!
MWM would have made himself beans on toast! :(
My husband would eat that even if people were looking. He would also ask for beans and tortillas.
I've served this when everyone was looking!
I had beans on toast with an egg on top..... except Ive lost the sense of taste and smell at the moment lol.....

Nothing better than making something out of nothing. I have done the same thing many times. The first bite is always an adventure. LOL

mmmm...i've been in the mood lately for such things! but not the snow...no no. lately i've noticed a never-ending supply of tortillas in my fridge.
