Fathers' Day At My House....

What a great day! I fixed a meatloaf (herb based!) with a portobello mushroom sauce, hash-brown potato casserole, homemade bread and store-bought-but-excellent raisin oatmeal cookies! My son (in town one!) came over and ate the heck out of it! I then had a long, and good conversation with my son in K.C. about his excellent photography on his blog( bouncybouncy.blogspot.com) . He is a top flight writer who has to get back to his strong writing/communicating skills! Please check out his photos, and encourage him to start writing along with those photos! You will not regret it!

Pink and DogB- This has to be a Midwestern phenom, similar to the infamous "green bean casserole"!
1 bag of frozen hash browns
1 8oz of sour cream
1 can of cream o' celery/chix/mushroom soup(pick only one!)
12oz pkg of shredded sharp cheddar cheese, 8oz in mix, 4oz as topping.
6oz soft butter
1 cup finely chopped onions
salt,pepper,minced garlic to taste
Mix all ingredients, put into buttered baking dish- bake uncovered 1 hr. at 350F(adding 4oz cheese topping 10 min before done!)The moisture level is up to you-more liquid if you like a "mashed"
texture, less if you want crisp.

That recipe sounds brilliant. From what I can remember form school theres barely a calorie in the whole thing. Thats me sorted for tea.

Ooooh! I forgot to tell you guys about my neat gifts! I now have a kitchen torch! My dessert presentations just got better-and you can use it to "skin" tomatoes and peppers! Also, a Vidalia Onion Chopper-really the first one of these gizmos that actually do a good job chopping uniformly...
