Freelance Pasta Salad!
I never seem to make pasta salad the same way every time.... I tend to use what is available, yet compatible! The one you see in the photo takes on a bit of an Italian theme, with the following ingredients:
Tri-colored spiral pasta
Hard cooked eggs, chopped
Pepperoni slices, quartered
Shredded sharp Cheddar cheese
Chopped sweet onion
Chopped tomato
Chopped green olives
Chopped black olives
Creamy Caesar's Dressing, for binder
Mix and chill, then serve on bed of lettuce
The green olives provide enough salt for the whole recipe, pepperoni gives heat but not too much!), and the dressing is somewhat tart and garlicky-really good!
Nice cool bite to eat, when the weather is hot!

I was just wondering what to have for dinner - great idea Buff, thanks. :)
I love tri colored pasta.
Ake- We enjoyed this!
Kate- Me too!
For some odd reason, my family never liked pasta salads. I do, however and now can have one whenever I want. (Except when they're here!)
My favorite is very basic...just pasta, black olives, tomatoes, red pepper, Parmesan and a vinaigrette. Next time I make it, I'm going to add some of your ingredients. Never thought of eggs. Yum.
Looks like a nice light lunch on a hot day.
I like Pasta Salad the same way I like Revenge....SERVED COLD.
Room temp or cold- and I was taught to eat whatever was served, so this sounds great to me!
I never thought of adding pepperoni - that sounds SINFUL! :)

looks good, and the ingredients sound good but I dont eat pasta salads, I'll make em' just wont eat em' unless they are ice cold from the fridge and not more than a couple hours old....definitely wont eat it, even cold, the next day.....although the pepperoni does up the ante a little.
freakin LOVE pasta salad. And I'm like you, I make it differently every time!
Can you believe I've never made a pasta salad in my entire life? My mother thought it was the greatest invention since spam & TV dinners. Me, not so much, but yours sounds good.
oo...love the add of green olive and pepperoni! nice.
I am a big fan of pasta salad, but I only like black olives.

Brian- Both really worked...
otin- Put in what you like, and leave out what you don't- it's OK!
Looks good BD. I had a tri-colored pasta salad once that had salami in it and I thought it was delicious.
I like the idea of changing it up every time you make it!
Hey Buff,
I'm gonna try this in the summer. It's still bloody freezing here. Have a great day/night.
I never make anything the same way from time to time, which is why I will never work in a restaurant.
Lea Ann- That certainly would work well!
BlueV- Depends what's in the house...
KB- Please do! Hope you have been well...
sage- I'm with you!
That salad ought chase the doldrums right out of your mouth. It sounds really good.
Using Creamy Caesar's Dressing instead of Mayo sounds like a great idea.
Looks good.
Yummy. But why "Freelance?"
Look really nice Buffalo, xx gloria
I ate pasta salad for the first time in my life this year. True story.
Looks and sounds like a meal in itself.

mmmm, pasta salad is a big hit with my Dirtbike Boy....and the more olives and pepperoni, the better!
Arghhh coming here always makes me dribble on my keyboard!!
boy, that looks good. Noodles and pasta are my "staples"
Freelance Pasta...Love the name.
I love pasta...cold or hot. The old boy prefers rice or potatoes.
I make a mean cold seafood pasta salad with dammed near everything but the kirchen sink added in. I like lots of fresh veggies and especially tomatoes in mine. I think the secret is that I add chili or cocktail sauce, a bit of yellow mustard and a tsp. of sugar into my mayo mix and also chili powder and a bit of dill. For a bring-to dish I always crush potato chips or fritos on top and usually bring a tray or two of deviled eggs along too. I never bring leftovers home.
Yours sounds yummy, simple to make and great for a hot day meal.
J-
Try adding a handful of peanuts and some chopped crispy bacon sometime. It adds some crunch and even more flavor. I make one that Kevin says is like eating a Mac BLT salad. He loves BLT's so he'll eat that one any old time.
J
Just like me...
No recipe'...hehehehehe
You know, I never ate much pasta salad growing up.
Beth- They did make a difference...
E.D.- We enjoyed!
carma- Try it!
J.J.- Sounds like you freelance, too!
g-man- Best way to get what you want!
BlondeD- Change that soon...
I never make pasta salad the same either. Often, I wish I would have kept notes though because once its gone, it just may never be the same again.
