Sunday After Chili- Chinese Sounds Great!
Usually, after a chili filled Saturday, our Sunday meal is as far away from chili as we can get! This meant a seafood stir-fry over white rice was going to be on the menu... We hit Sam's Club for our every other month stock-up of T.P., paper towels, cat litter, etc. I really look forward to checking out the meat and seafood deals at Sams, as I find the quality pretty good! Scored 2lb. of frozen sea scallops- some of which were diver scallop size! A large cut of Dutch Gouda cheese, some thick cut bacon, and some 90/10 ground beef was about all I needed for the food supplies today.. I had some shrimp already at home, in addition to plenty of other ingredients for stir-fry, so away we went!
The dish I prepared had 1lb. shrimp, half of those scallops, onion, green pepper, bamboo shoots, water chestnuts, and mushrooms- all sliced to size. The sauce had chix broth, organic soy sauce, oyster sauce, garlic, sesame oil, white pepper, rice vinegar, honey, and salt- all thickened with corn starch into the right consistency. I stir fried the veggies in oil, added scallops, shrimp, and sauce a little later, as not to over cook. Came out pretty tasty- not much left!
Later, I decided to try coconut macaroons with chocolate chips for the first time. Learned alot! I learned they are a mess to make! I took the remaining cookie mix, added cocoa and confectioners sugar, and made a no bake choco-coconut ball! easy, and good! Hope you all have a good week!

Now THIS is right up my alley. Scallops, shrimp, coconut. YUM. I'm still trying to figure out what to make myself for breakfast. As usual I'll more than likely just skip it because I'm SO bored with breakfast. Buf dear, inspire us with something delicious (but vegetarian and gluten free, how's THAT for a challenge??!)
PS - thanks for the kind words the past few days, you're amazingly wonderful. (Even though I know you're not all the time, just accept the compliment now, damn you!!)

most of our meat at Sam's Club as well and have always been thrilled with the quality! Did I miss the update on the cook-off results?

looks like it came out pretty good....score on getting some large scallops mixed in....are you going to do anything special with them?
how messy can they be, you mix egg whites with sugar toss in the coconut and dollop on a cookie sheet..
finn- I like macaroons too, but I made them too big, and didn't bake them as long as I should have...
insanemama- The scallops is what I was looking forward to... Kids can have some macaroons too!
odat- those no-bake chocolate coconut balls were really good too!
Ake- Too much work, too long hours!
mona- Then I'd have to cook, instead of want to cook!
Dog B- The ones left are going to be wrapped in bacon, drizzled with my ginger oriental BB-Q sauce, and broiled whole.... soon!
dogB- I used the ground New Mexican powder you sent me, and tonight I ground the dried hot peppers that came with it... You said I could taste the sunshine- well there was radiation involved, that's for sure! Hhhaaat Stuff! Thanks again!

I agree on the Sam's club observation. They sell so much stuff that their produce and meats are very fresh...

We used to belong to BJ's (like Sam's Club) but we let our membership lapse...We liked the convenience, but on most stuff that we buy, we didn't feel it was worth the membership fee. I'm sure with the rising cost of groceries, we should revisit this decision!
