Easter Dinner At The Buffalo Dicks' Diner....








Yesterday, I bought the biggest leg of lamb the store had, freshest green beans, and newest red skin potatoes.... I made a cherry crisp for dessert, and have some excellent bread to go along. I butterflied the leg of lamb, making it boneless, and with all the fat and fell removed. This was a bit*h! Getting that lamb off the bone so it could be grilled like a steak was a pip! I then marinated it overnight in an olive oil, garlic, pepper, salt, red wine vinegar, onion powder, rosemary, and thyme goo. Lamb shows best over charcoal, served medium rare. The potatoes are a redskin, cut in half, with garlic, rosemary, salt and peppa, butter mix, that gets baked for about an hour. Bacon bastes it! Green beans are steamed, but then drizzled with bacon renderings, seasoned with your choice! Lent is a done deal! Pig(Lamb!) out and enjoy yourselves today!

TASTY, that meat looks like it should and I bet it was hot and pink in the middle....red potatoes are my new best friends...

I can not believe you didn't invite me over for dinner! Lord that looks so good! I have never had lamb. Isn't that just a crying shame? And see, you could have changed all that.

I'm not even hungry but day-um!!! My mouth is watering right now!!! I've never had lamb either...I think you should have me and Bina over sometime....to take our "virginity" so to speak! ;)

I absolutely ADORE lamb! I'm just scared of cooking it... it's a tricky meat and can end up tasting like wool. But your recipe sounds like maybe I could have a go at it.

pink- filleted out at about 3-1/2 lbs. Plenty left over for Irish stew!

That looks like the biggest piece of meat Ive EVER seen on a BBQ lol........ and lamb is my utmost favourite meat in the world.... Jebus I wish I had been invited to dinner at your house :)... I would of made a proper trifle lol

marmy- I had never butterflied a leg of lamb- always roasted them whole. My kid came back Monday, grabbed some of the lamb stew I'd made, and strolled out with the rest of the left-over grilled lamb! Must have been pretty good...
DogB- If the weather ever breaks, I'm going to try cabrito on my BB-Q smoker- never done it, but I know where I can get the meat!

bina- After the feast, so far this week, we have had Lamb stew, grilled swiss cheese sandwiches, and scratch cheeseburgers... uneventful food to say the least!Soon, dear- very soon...
